Hi All….it feels like forever since I last talked your ear off!!  Which I love doing, but I think it’s good this way…I might get very boring if we did this everyday!!  Ok, so I know not everyone is having the fabulous weather we’re having (so sorry), but man I gotta talk about it – Spring is pretty much here in Seattle…. the Cherry Blossoms, Daffodils, Crocus, and Lilacs are in full bloom – I love it!  This weekend the weather was perfect, and when its like that here, all I want to do is be outside.  We took the kids to the ‘beach’ here – and they loved it, and I got some cute pics, so I was really happy.  I think we might be planning another trip to Forks coming up – this time we’re going to spend the night, I’ll be hoping for some vampires to sneak into my window to cuddle up with – or a werewolf, either way…I’m not prejudice to either mythological being!!!

Before I get on to the Sneak Peek…I GOTTA KNOW – did any of you try the Norwegian Waffle recipe??  If so, did you like it?  KATHLEENA – girl, you have to let me know what your Dad thought, it took all I had not to try and track you down and ask….but I tried to be patient, so hollar at me when you make them!!

Ok, so on to the Sneak Peek – or for all you World of Warcraft nerds….LEEROY JENKINS!!!!   OMG, my husband just showed me that video tonight and I couldn’t stop laughing – we don’t play WoW, but know people who do, and well, if you know anyone who plays this game…GOOGLE IT!  Too funny!

Ok, now for this Yummy recipe I mentioned!  FYI, these waffles are not crunchy or like belgian waffles at all.  In fact, they are served usually with a jam / jelly.  I grew up eating them at the Norwegian Church my Dad took us to occasionally, they were more as an hors d’oeuvre  (ok, I just had to google how to spell that, I couldn’t for the life of me think how to, hahaha!) – and it’s usually at room temperature!!

2 cups  Sugar

5 med Eggs

4 cups  Flour

1 quart Buttermilk

1/2 tsp Baking soda

1/2 cup Whipping Cream (but in a pinch we’ve used evaporated mild before)

1/2 cup butter/margarine; melted

1 tsp. Cardamom (this is completely optional, in fact, I leave it out all together, because I’m not a big fan of it, not to mention it can be pricey)

Beat together sugar and eggs.  Alternate adding flour and buttermilk.  Stir in baking soda.  Add whipping cream, then butter/margarine.  *stir in cardomom (optional).  Cook in **HEART shaped waffle iron following manufacturer’s instructions.  Avoid greasing iron; use non-stick cooking spray if necessary.  Serve waffles with berry jam.

Each waffle contains 267 Calories; 108 sodium (i think, my recipe is splotchy here, haha); 70 mg cholesterol; 7 g fat; 45 g carbohydrates; 6 grams protein; .09 gram fiber (fiber gram is splotchy too)

**Ok, I know not everyone has a heart shaped waffle iron, but this is 100% traditional, so if you wanted to impress your Norwegian friend, hahaha, this is how to!!
